Once you've cured the belly in the curing bag provided, you'll have to pop it in the fridge and leave it for 7 days (arguably the slowest and most agonising 168 hours of your life). It's then into the oven for a couple of hours (nearly there) and after it's cooked and cooled you can slice it – as thick or as thin as your heart desires. What's more, this bacon won’t shrink or release a heartbreaking pan full of water so you’ll wonder why you ever purchased that inferior pre-packaged hogwash from the supermarket in the first place.
